New Product Spotlight: Gai Lan
Gai lan has high amounts of calcium that aids in bone health and iron that helps in reducing tiredness. Gai lan can also give you 40% of your daily value of vitamin A and 41% of your daily value of vitamin C. Both vitamins are antioxidants that protect against free radicals, which can cause chronic health damage such as cardiovascular and inflammatory disease.
Check out this recipe for how to cook gai lan. Slice about ½ an inch to an inch from the bottom and separate the stems from the leaves because the stems take longer to cook. It is important that your pieces of gai lan are roughly the same size, so they can have the same cooking time. If you are not used to the slight bitter taste, we recommend blanching the gai lan. First, boil water with one tbsp of olive oil and 1 tsp salt. Once the water has boiled, cook the gai lan for about 1 to 2 minutes or until it has reached your desired softness. Alternatively, you can simply stir fry the gai lan in some neutral oil and then add garlic, salt, and sesame oil.

Food Justice Corner: The Framework for Fighting Food Justice
In a new blog post, Lesly Gissell Zhicay, discusses the impacts of our individual actions when it comes to fighting for food justice. Read some of Lesly’s work below.
“A part of the framework that we have built-in efforts of fighting for food justice is dedicated to health and well-being, now you may ask yourself what does our individual health and well-being have to do with food justice?
While we understand that saving our planet and feeding the world requires all our collective efforts, it is also important to recognize that collective efforts are comprised of small individual actions that grow day by day. If we actively fight for food justice within our minds and bodies, then we can ensure that we are actively creating that for others.”
